El sector de los caficultores representa más del 63% de empleo en Colombia, sin embargo, es uno de los sectores más afectados por las condiciones de trabajo ya que se presenta mucho trabajo informal, ingresos precarios, inestabilidad laboral, el no acceso a seguridad social y el no reconocimiento digno de su trabajo. En este sector existe bastante competencia entre las fincas reconocidas que mantienen monopolizado el mercado, dando paso a que las no reconocidas necesiten obtener su espacio en el mercado mediante las alianzas entre los emprendedores locales, la innovación en nuevos sabores, texturas y aromas del café abriéndose paso en el mercado nacional.
Es aquí donde María Eugenia, ve una oportunidad de negocio sostenible que aporta al desarrollo de las comunidades, el apoyo entre emprendedores y el crecimiento económico, destaca las buenas prácticas del café especializado dando vida a Café V60, “Decidí fundar Café V60 en el 2021, luego de muchos años de trabajo y esfuerzo, su nombre hace referencia al método tradicional de extracción del café, el equipo de trabajo está conformado por Vanessa y por mí, quienes desde nuestra labor ayudamos a promover el consumo responsable del café apoyando a los caficultores que ejecutan procesos consientes para producir café de excelencia, a su vez generando alianzas estratégicas con otros emprendedores apoyándolos en su proceso de crecimiento y desarrollo en el mercado."

The coffee growers sector represents more than 63% of employment in Colombia; however, it is one of the sectors most affected by working conditions, with a lot of informal work, precarious income, job instability, no access to social security and no decent recognition of their work. It is here where María Eugenia sees a sustainable business opportunity that contributes to the development of communities, the support between entrepreneurs and economic growth, highlights the good practices of specialized coffee giving life to Café V60, “I decided to found Café V60 in 2021, after many years of work and effort, its name refers to the traditional method of coffee extraction, The work team is conformed by Vanessa and myself, who from our work help to promote the responsible consumption of coffee supporting coffee growers that execute conscious processes to produce coffee of excellence, at the same time generating strategic alliances with other entrepreneurs supporting them in their process of growth and development in the market. "
El emprendimiento de Café V60 en la actualidad tiene una alianza con Don Octavio una finca cafetera ubicada en la ciudad de Neiva, desde allí se proporciona la materia prima para elaborar de manera cuidadosa y con los más altos estándares de calidad el café especializado y sus derivados, los cuales son ofrecidos por V60.
En V60 no solo se ofrece el mejor café, sino que también le apuesta a endulzar el día con postres artesanales, los cuales son elaborados por emprendedores de la zona y del país trabajando mancomunadamente entre sí, con el fin de crecer en conjunto, permitiendo que los productos de los otros emprendimientos sean reconocidos.
Así mismo, para María Eugenia, propietaria del Café V60, es importante que ella y el personal vinculado a su emprendimiento estén actualizados y capacitados para trascender en el tiempo, así como también brindar un servicio especializado y único a sus clientes.

Este proyecto Café V60 nace hace mucho tiempo, pero no se había materializado, fue después de la pandemia que María Eugenia quien es Contadora de profesión, decide desarrollar la idea que siempre tuvo, hacer algo adicional y diferente que no fuera solo rentable sino que también aportara a su comunidad desde la sostenibilidad y la responsabilidad, fue allí donde surgió la idea de tener un lugar que no fuera común en el parque principal de Chía, sino un espacio que permitiera al consumidor sentirse tranquilo, conociendo las practicas responsables y el trabajo que se lleva a cabo con los caficultores en la finca Don Octavio en Neiva, también por medio de la apropiación y explicación de la cultura del café mediante los diferentes métodos de filtrado, además descubre otra pasión que es la pastelería artesanal y al día de hoy continua formándose en ella.

El emprendimiento Café V60 contribuye a diferentes Objetivos de Desarrollo Sostenible, el primero de ellos es el ODS 8 trabajo decente y crecimiento económico, esto lo hace a través de la vinculación de más emprendimientos a Café V60, que apoyen las actividades productivas, la creación de puestos de trabajo decentes, el emprendimiento, la creatividad, la innovación, el fomento de la formalización del trabajo, ofreciendo un trabajo digno con salarios y jornadas acordes a las capacidades de los trabajadores (Finca Don Octavio y sus caficultores) y el crecimiento de las microempresas, las pequeñas y medianas empresas, incluso mediante el acceso a servicios financieros, se busca que cada emprendedor pueda ser rentable en el tiempo y a su vez esto permita mejorar la calidad de vida de ellos y sus trabajadores aportando a la disminución de la pobreza en el país.
Adicionalmente a través de la alianza generada con Don Octavio, la cual es una finca cafetera ubicada en la ciudad de Neiva-Huila, desde donde proporcionan la materia prima para elaborar el café especializado con un alto estándar Café V60 contribuye al trabajo decente de los caficultores de la zona brindando una mejor calidad de vida, salarios justos, mejor infraestructura local, acceso a la educación y servicios a la salud; de igual forma logra promover desde allí la venta justa de café a la hora de comercializar ya que se elimina a los intermediarios y se genera la venta directa con la finca caficultora.
El siguiente ODS al que Café V60 contribuye es el ODS 10 Reducción de las Desigualdades, con el objetivo de promover la inclusión social y económica, dentro de Café V60 se busca mejorar la calidad de vida de las personas que emprenden al vincularlos a la iniciativa emprendedora desde la experiencia de Maria Eugenia quien apalanca a su comunidad por medio de estrategias de networking, ella lo hace por medio de la exposición de los artículos de los emprendedores dentro de su café y también promoviendo nuevas alianzas dentro de las comunidades para que los nuevos emprendedores sean reconocidos, logra disminuir el margen de fracaso en cada uno de los emprendimientos de su comunidad teniendo en cuenta sus experiencias, su responsabilidad, sostenibilidad y el amor con el que hace las cosas, también ayuda a establecer vínculos económicos, sociales y ambientales positivos entre las diferentes comunidades de las zonas urbanas, periurbanas y rurales fortaleciendo la planificación del desarrollo nacional y regional por medio de las alianzas que se establecen entre cada uno de los emprendedores, sus proveedores y clientes.

The next SDG to which Café V60 contributes is SDG 10 Reduction of Inequalities, with the objective of promoting social and economic inclusion, Café V60 seeks to improve the quality of life of entrepreneurs by linking them to the entrepreneurial initiative from the experience of Maria Eugenia who leverages her community through networking strategies, she does it through the exposure of the articles of entrepreneurs within her coffee and also promoting new alliances within the communities so that new entrepreneurs are recognized, She also helps to establish positive economic, social and environmental links between the different communities in urban, peri-urban and rural areas, strengthening national and regional development planning through the alliances that are established between each of the entrepreneurs, their suppliers and clients.
El emprendimiento Café V60 es un negocio que se ha mantenido durante 3 años, en donde se ha posicionado en el mercado local, al inicio solo ofrecía café especializado en un lugar compartido en Chía; pero, al pasar el tiempo, María Eugenia logro ubicarse en el parque central de manera independiente y desde entonces empezó a comercializar productos de pastelería artesanal, un complemento para disfrutar con un buen café; este lugar tiende a crecer y mantenerse en el tiempo, dadas las alianzas que ha forjado la propietaria y la capacitación constante que recibe ella y que trasmite al personal que rodea su negocio.
María Eugenia comparte que le gustaría tener un cafetal en la finca de su mamá para convertirla en un lugar turístico donde las personas aprendan de las propiedades del café y todo lo relacionado con la siembra y el proceso de cosecha de café con la finalidad de concientizar a las personas respecto al arduo trabajo que realizan los caficultores y la importancia de apoyar este sector.
El emprendimiento Café V60 es un negocio que ha logrado mantenerse en el mercado desde el año 2021, en donde se ha posicionado en el mercado local, en su inicio (2021 y 2022) solo ofrecía café especializado en un lugar compartido en Chía, en el 2022 tuvo ingresos de más de $37.000.000; al pasar el tiempo, María Eugenia logro ubicarse en el parque central de manera independiente y empezó a vender productos de pastelería artesanal los cuales se complementaron perfectamente con el café que vende desde este nuevo posicionamiento sus ingresos en el 2023 aumentaron alrededor de un 36%, en ese año sus ingresos fueron de más de $50.000.000.
Maria Eugenia ha aportado al crecimiento económico en la sociedad, ya que este proyecto la beneficia a ella y también a jóvenes que han laborado en el negocio obteniendo su primer empleo, así como también apalanca los emprendimientos en general, un ejemplo de ello es que María Eugenia compra café a una finca de caficultores especializados quienes son emprendedores, así mismo en V60 se promociona la pastelería artesanal la cual es un complemento para disfrutar con un buen café, de igual forma; se pueden observar variedades de productos los cuales son elaborados por emprendimientos, generando reconocimiento en estos y estableciendo nuevas negociaciones en el mercado.
Para Café V60 su mayor pasión es que reconozcan el café especializado como una de las grandes riquezas de Colombia, busca proyectarse dentro de su comunidad fortaleciendo los vínculos sociales y económicos construidos durante la segmentación de su negocio aportando lo mejor a la sociedad, de igual forma es consiente del valor de los caficultores en el proceso de producción de café con excelencia el cual es un motor para que en conjunto con su mamá puedan segmentar una finca que se convierta en su principal fuente producción de café para abastecer su negocio, dar oportunidad de empleo a los caficultores de la comunidad y distribuir el café con los emprendedores de la zona; con un atractivo diferenciador convertirla también en un lugar turístico donde las personas aprendan de las propiedades del café, permitiendo a los visitantes obtener una cultura cafetera por medio de la experiencia de la siembra de café.
Se resalta que Maria Eugenia con su gran pasión seguirá en la búsqueda constante de nuevo conocimiento, reconocimiento y alianzas para seguir avanzando en el mercado y seguir contribuyendo al trabajo decente, el crecimiento económico y a la reducción de las desigualdades

For Café V60 its greatest passion is that the specialized coffee be recognized as one of the great riches of Colombia, it seeks to project itself within its community strengthening the social and economic links built during the segmentation of its business contributing the best to society, In the same way he is conscious of the value of the coffee growers in the process of coffee production with excellence which is an engine so that together with his mother he can segment a farm that becomes his main source of coffee production to supply his business, give employment opportunities to the coffee growers of the community and distribute the coffee to the entrepreneurs of the zone; With a differentiating attraction to also convert it into a tourist place where people can learn about the properties of coffee, allowing visitors to obtain a coffee culture through the experience of planting coffee.

Café V60 cumple con altos estándares de calidad en el proceso especializado del café, al no tercerizar la compra de su materia prima logra contribuir con la disminución de huella de carbono ya que no esta fomentando el proceso de bodegaje para el café.
Por medio de su apoyo a los caficultores logrando la negociación directa con la finca de Don Octavio. Café V60, logra contribuir al desarrollo económico y social de la comunidad caficultora mejorando así la calidad de vida, un salario más justo, mejor infraestructura local, acceso a la educación y a los servicios de salud fortaleciendo así a las comunidades rurales de café.
De igual forma Café V60 logra la inclusión social y económica impulsando nuevos emprendimientos brindando los espacios necesarios para que los emprendedores puedan segmentar sus ideas, comercializar sus productos y logren materializarse en el mercado local
